Plant Based Breakfast Pancakes

Messing around in the kitchen over the weekend we created these delicious & vegan friendly pancakes ๐Ÿฅž
We wanted something a little lighter & healthier to a normal fry-up.

This genuinely is so far our favourite breakfast recipe even more so than our overnight oats & yโ€™all know we are obsessed with our oats๐Ÿ”ฅ๐Ÿ™Œ๐Ÿป

Sharing is caring, so hereโ€™s the recipe:
Makes 6.

๐ŸŒฑ400ml almond milk
๐ŸŒฑ3-4tbsp maple syrup
๐ŸŒฑ1 tsp chia seeds
๐ŸŒฑ300g self raising flour
๐ŸŒฑ 60g porridge oats
๐ŸŒฑ1 tbsp cacao powder

Toppings ๐Ÿ‡
๐ŸŒฑ Almond flakes
๐ŸŒฑ Desiccated coconut
๐ŸŒฑ Drizzle Maple syrup or honey
๐ŸŒฑ Frozen mixed berries

Method:
1. Mix all the pancake ingredients together. If mixture feels a little thin, leave to set for 5 mins or add a touch more flour/oats

2. Once mixed, drop some oil onto a frying pan & pour the batter onto it, cooking one pancake at a time.

3. Cook for 4-5 mins on each side flipping as you go until golden.

4. Stack the pancakes onto a plate, adding your favourite toppings.

TIP: Heat your frozen berries in the microwave. They turn to a delicious warm purรฉe which tastes delicious with pancakes ๐Ÿ‡๐Ÿ“๐Ÿ’

Mixed Berry Peanut Butter Porridge

Our favourite lazy Sunday morning breakfast ๐Ÿฅฃ ๐Ÿ’ซ

Porridge can be as tasty or boring as you want to make it!
We mixed some chia seeds, & frozen berries into our porridge oats before popping into into the microwave for 2 mins.
The frozen berries turn into a purรฉe when heated & its absolutely delicious!
Ingredients๐ŸŒฑ
- Porridge oats
- Chia seeds
- frozen mixed berries
- Milk or plant based milk๐ŸŒฑ๐Ÿฅ›
- Peanut butter ๐Ÿฅœ
- Honey ๐Ÿฏ

Method:
Not that you probably need it ๐Ÿ˜‚
- Pour all ingredients into a bowl except the honey and peanut butter
- Heat in the microwave for 2 mins
- Once heated add your honey & peanut butter & mix
