Messing around in the kitchen over the weekend we created these delicious & vegan friendly pancakes 🥞
We wanted something a little lighter & healthier to a normal fry-up.
This genuinely is so far our favourite breakfast recipe even more so than our overnight oats & y’all know we are obsessed with our oats🔥🙌🏻
Sharing is caring, so here’s the recipe:
🌱400ml almond milk
🌱3-4tbsp maple syrup
🌱1 tsp chia seeds
🌱300g self raising flour
🌱 60g porridge oats
🌱1 tbsp cacao powder
🌱 Almond flakes
🌱 Desiccated coconut
🌱 Drizzle Maple syrup or honey
🌱 Frozen mixed berries
1. Mix all the pancake ingredients together. If mixture feels a little thin, leave to set for 5 mins or add a touch more flour/oats
2. Once mixed, drop some oil onto a frying pan & pour the batter onto it, cooking one pancake at a time.
3. Cook for 4-5 mins on each side flipping as you go until golden.
4. Stack the pancakes onto a plate, adding your favourite toppings.
TIP: Heat your frozen berries in the microwave. They turn to a delicious warm purée which tastes delicious with pancakes 🍇🍓🍒
